
I‘m going on a 2 Month 5000+km Bikepacking Trip trough Europe. Should I replace the Backpack on the Rack with a set of panniers? I feel like i dont have enough spare space for Food and Water.
My tent, Sleeping back and all the other essentials allready fit right now without a problem.

I had a similar setup last summer on my bike and went from Copenhagen til Venice in about 5-6 weeks. I brought a small shopping net that I Could strap on or ride with on the should for the last distance from a shop to Camp.

I only carried 2L of water through Europe, never needed more. Free water fountains everywhere, even easier if you have a water filter too (I didn’t at the time).
As far as food goes, it all depends on your strategy and your route. Only you can know the answer to that. Personally, I only carried enough food for an energy crash and just ate outside shops. I wasn’t going to very remote areas though.
I am facing the same question. Everything fits on the bike but nothing to spare. I am planning for the pamirs
My solution is, take my 25 litre backpack, but empty except for a 2 litre water bladder and perhaps an extra set of merino underwear. That gives me 20 litres spare capacity without weighing me down when I am not using it. The backpack has a netting panel for airflow between it and my back.
Would add one or two top tube bags and maybe stem bag. Small saddle bag for tules could be useful also
