Just bought a beautiful minimalist, classy, superlight singlespeed with no fenders, rack, panier…
But I hate having a backpack and sweating no matter my pace. So to keep the phylosophy of the bike I'm searching for a leather frame bag but can't find any and I'm in Europe (France)

Cycling gear is pretty niche and a leather frame bag that would fit a laptop is several layers of niche even with all the modern synthetic materials. Maybe consider a minimalist rack that would carry a leather briefcase that would be cheaper and easier to find? Porteur racks are on classic early modern bikes and would fit your nichey-niche goal. Or just pay for a custom bag that is exactly what you want.
Make one.
That first one is essentially just a satchel with straps to attach it to the frame. Grab yourself a nicely priced satchel and repurpose the straps.
You could even make a custom one from scratch, it wouldn’t be too difficult if you’re even remotely crafty, and it would be exactly what you need, fitting your bike perfectly.
Even better, make two then sell one to cover all of your costs, you end up with a free bag.
