I've adjusted the height of the handlebars by moving the handlebars up and some spacers down the tube and after that the head tube became very loose.
Can anyone help me fixing this?

You’re missing the bearing preload.
Loosen the clamping bolts on the stem, tighten the top cap bolt until the play is gone (could be between 2-3 Nm) and then tighten the camping bolts back to spec.
