Chest mount makes for the best angle, as being able to see the riders hands and bars gives some perspective and the viewer a sense of actually riding the bike. Too wide an angle will have too much of the rider’s arms in shot, though, and it can feel claustrophobic.
I don’t think the angles you’ve used are particularly interesting. Looking back at the rider quickly gets boring, and the forward-facing angle just might as well be a drone shot. Also, having the camera mounted to the bike makes the ride look very rigid and undynamic.
