Canyon’s do have quite a long reach, so that would mean an L fits better. But your long inseam would suggest you still need an XL frame. Otherwise the saddle to bar drop might be too big.
Do you have a road bike currently? I’d say: compare the geometry tables of both the L and XL to your current bike and go from there

Idk how long your arms are etc. But i think you might feel cramped on a L. You would also have a significant drop with your long legs. L will have a lower stack than XL already, so with the saddle almost fully extended your position will be really aggressive i think. If that’s what you want and you can hold this… I would just go with XL probably.
You could use this website to compare your current bike and geometry to both sizes. And since you are from Germany, could you maybe go to Koblenz or Hamburg or sth and do a testride?
