Nice insight from di2stats.com. You can see small jumps in the timeline; presumably there were slight gradients in the road so I shifted to an easier cog for a couple seconds.
Honestly I don’t know, shifting is not a concious decision, it just happens subconciously 😀

Huh I usually leave mine in a comfortable gear and only shift when there is a significant change in gradient or I have to slow down/stop for a ped or traffic light. Sometimes I will go 30mins or more without touching the gears. Today I did a 60km ride with quite variable gradients and maybe changed the gears a total of 20 times?
I run an old 3×7 tho so the gaps between each gear is quite large. I imagine if I had a 2 or 1×12 I’d be changing the gears all the time.

I live in hilly Seattle and would love to know my shifting stats, but I’m living mech life.

I did a deep analysis of shifting during my Ironman Wisconsin ride, my now dead blog.
I suspect why to seems you do it every 18 seconds is that you’ll hit a hill or corner and drop a few rings, then after it jump back. Those sets of immediate shifts average out to what seems like frequent shifting.
Iirc I initially had the same “wow” moment as you.

I just went through a few outdoor rides I did in the last few months. One ride I shifted on average every 13 seconds and the other every 8 seconds on average. I like a specific cadence. Which is a big reason why I hate 1x. The jumps are too big.
And FYI, you can use the SRAM AXS app even if you run Di2. You can connect Strava and auto upload your rides to analyze gear shift data.
