NBD but instead of jumping for joy I'm jumping up and down in frustration because the pedals are stuck. I've tried everything from multiple different allen wrenches to lubrication. What am I doing wrong?

One side is reverse thread. I can’t remember which but another commenter or Google search will tell you
I assume you’re trying to take them off?
If so – are you aware they are threaded in opposite directions (not just ‘lefty loosey righty tighty’)?
If not you could inadvertently be tightening them. I always remember to rotate the pedal bolt towards the back wheel to undo – works on both sides, and vice versa to tighten.
