Currently I have Giant Fathom 29. I am interested to know what 27.5 wheel would feel like. Is it worth trying (buying new set of wheels, hub, and cassette)? It will cost several hundred dollars combined.
Is 27.5 better for bike park or pump track than actual trails?

No. Geometry matters. Your geometry is made for wagon wheels. Want to see what 27.5 feels like? Go and demo a bike or two, or borrow a friend’s.
The bike you’re showing uses 27.5 by 2.8 size tires and the larger volume of those tires makes up for most of the difference in wheel diameter between 27.5 and 29. Putting 27.5×2.3 wheels and tires on that bike is going to make it ride like shit.
