It has been a great 7 years of owning my Trek Roscoe 8 and that thing has been a tank. But ever since last year, it’s had some hiccups with shifting which no shop that I brought it to could fix with its stock components. Now I am thinking about doing an overhaul of my drivetrain since I just realized that the NX group set I currently have is not the eagle version. Is there a difference between the NX group set and NX eagle.

Group set is usually another term for the entire drivetrain. Cassette, shifter, derailleur and cranks.
So the NX groupset would include an NX derailleur.
7-8 years? That drivetrain is beyond done. Personally I think you should upgrade to GX. It’s a much better derailleur.
I’m new to sram but I think eagle means 12 speed.
Eagle is Srams 12 speed drivetrains. Yours appears to be 10 speed. You will need a cassette, shifter and derailure to switch it over.
AFAIK, “Eagle” is the name given to the super-wide range, 10-50 (now 10-52) cassette groups and the derailleurs and shifters that go with them. You will definitely need an “Eagle” derailleur if you plan on using an “Eagle” cassette. Higher-end Eagle uses a specific freehub body on the hub (called SRAM XD), but NX does not.
Looks like your current cassette has about a 40t largest cog. Do you find you need easier gears while climbing? If not, Eagle might not do much for you.
