Brand new shifter and wire. I’ve adjusted the limit screws but the gears are just refusing to jump to any other gears apart from 1st 🙁 any ideas?

Could be any number of things. Have you considered taking it to a bicycle shop?
You might’ve taken up the slack in the new shifter cable. That tends to happen. Loosen your derailleur’s anchor bolt and pull the shifter cable a bit more to take up the slack, then tighten the bolt. (ETA You want your shifter to be set on the first gear aka the smallest cog)
If it’s not that, you may have some kink or odd bend in your housing. But my bet is on Plan A.
Park Tools has a great set of youtube videos showing how to dial in a shifter.
In general, set the shifter to the highest gear. Tighten the barrel adjusters and back off a turn or so. Loosen the pinch bolt. Adjust high limit screw. Pull cable taut and tighten pinch bolt. Adjust barrel so index shifting works. Set low limit screw. Ride bike.
First. Unclick the shifter all the way. Not sure exactly how to say this to make it make sense… remove all clicks from the shifter. Shift up until you can’t shift up anymore.
Turn clockwise, the adjusters, until they stop, then counter clockwise 1.5-2 turns
Make sure all of the cable housing is seated properly.
Loosen pinch bolt on rear derailleur.
Pull all the slack out by pulling the cable towards the pinch bolt.
Retighten pinch bolt
Shift down 1 click
Adjust tension using adjusters as needed until chain shifts to second smallest cog and stops making noise
