
As per the title, I have the little special tool that holds the slot on the back of each screw. Is it just a case of using that to hold it still whilst screwing the other side with an allen key?

Yes that’s right, it can take a good bit of pressure to get them started.
Yup, hold the T nut carefully by pushing into the chainring while you turn the Allen key to loosen. They often have loctite on them, so they tend to break free with a bit of force. Because if this, it’s really easy to rip the skin off your knuckles, so take it slowly!
You might need a chainring slot tool. It’s recessed so it doesn’t slip out.

Its called a chainring nut wrench
to brake locktite, rust, smudge, heat it up with a torch much much easier to undo any old screws that haven’t touched for a long time and stuck
