Pump a hydraulic disc and it should come back slowly by itself. Always have the problem after pushing the pistons right back when changing pads. But it's perfect again within a couple of kilometres, and you can stop okay more or less straight away. Nevertheless, letting the pistons pop out deliberately in a "ontrolled" fashion is a bit of a risk.
Annoying ugly disc brakes. Rims are way more beautiful, easier to handle and lighter anyway. I'd prefer rim brakes for all roadbikes. Doesn't matter if aero or lightweight-climbing bike.
