I just bought a bike trainer with no instructions and couldn't get the back wheel secured, so I started messing around with the screw…. Well I loosened it enough that the back wheel dropped and the chain came off it's spokes.
I've been trying to get it all back together and I'm very close to throwing a temper tantrum. I'm not even sure what to search for on YouTube. Can someone point me in the right direction? I just wanted to blow off some steam with a new healthy habit.

Can’t help you a single photo at that random angle. Take a photo with the wheel and bicycle perpendicular to the camera FOV. TBH you’re better off taking your bike to the local shop so they can sort the whole bike out.
YouTube something like “bicycle quick release”.
Basically you have a quick release skewer that holds the wheel in. You don’t unscrew it all the way, there should be a lever on one side that you flip open to reduce the tension enough to let the wheel come out.
So first off, looks like you unscrewed your derailleur hanger. See the silver part above the mechanism that changes gears that had the weird shape? That fits into your bike frame and is attached with a screw that you have taken out (I think). Should fit in there like a puzzle piece.
After that is returned, the axle will fit into the dropout through the open side, and you can re-tighten the wheel using the quick release axle.
Open the quick release lever on the left side, put the wheel back into the dropouts, and then tighten the quick-release nut on the right side while trying to close the level on the left. It should be tight enough that the wheel won’t fall off.
And then put the chain back on the front gears (chainrings).
