I am choosing between Canyon Lux Trail CF 8 and Cannondale Scalpel Carbon 3
Canyon has the travel of the suspensions 115/120 (back and front) and Cannondale – 100/100. I like Canyon more tbh, but I worry that the suspension is too big and it will be hard to ride on a flat surface. On the other hand, it has 3 positions to lock the suspensions, but have no idea how convenient it is to use.
Maybe someone has experience riding Lux in a city which I am doing from time to time with my current bike? Is it so awful?)

If you’re riding in a city tires are gonna be the major concern compared to whether or not you have a bit more travel and lock out or not.
Sounds like you like the Canyon more, and maybe want a more all around trail bike. And not an XC race machine like the Scalpel.
But in terms of riding on pavement, neither bike is good or bad. The tires on both bikes will be bad. But that depends if you’re riding in the city to reach trails and ride dirt or not.
You can swap tires easily enough if you run tubes. But if you wanna run tubeless I’ve seen people have 2 sets of wheels for slicks and knobbies
