Best supple 700×30 tires for rough roads?

I have a neo-retro steel road bike which I like to use for countryside exporation-style rides, with the occasional unpaved path thrown in.

Currently I have Schwalbe One 700×25 tires (27mm wide in reality on 20mm rims) but would like to get something a bit bigger and more supple to take a slight bit of sting out of those unpaved paths. I tried fitting some 700×32 tires but those just barely didn't clear the rear brake caliper, so 700×30 is the biggest I can go. While it's only a few millimeters wider than my current tires, they should be significantly taller which adds a nice bit of comfort.

Not looking for tubeless because I don't ride this bike regularly enough and sometimes it sits unused for months while I use my more rugged bikes in the terrible Belgian weather.
