Picked this Varsity up for $50 and I plan to restore it and whatnot… It’s almost like this thing has been sitting its whole life! The rims are in perfect shape and there’s so little rust!

You’ve got a spoke missing on the front wheel, which indicates to me that they’re not perfect and in fact might need some work.
Some fine steel wool and car wax will make it look showroom new. The tires look surprisingly good, but new rubber would still be safer. Likewise for the brake blocks; modern materials stop better. The steel rims will resist losing a spoke, but they do need to be trued up.
BTW, did you notice the rear wheel’s valve stem is at an angle? Some prioowner spent time riding on an underinflated tire. With the air let out, it would be worth it to work the tire around the rim until the valve is straight.
