Quill Stem or Adapter?

I bought an old Trek 5500 OCLV frame. The finish was a bit beat up and the top tube had cable guides glued on horrifically.

I stripped the finish down to the bare carbon and shot it with an iridescent rainbow colorshift paint. I applied new metallic waterslide decals in tribute to the USPS treks and sprayed a satin Clear coat.

I plan to put Dura Ace 7700 components on. However I am stuck at the headset. Can someone recommend a nice 1" headset, with a chrome finish that is lightweight?

Also, should I go with a quill stem or an adapter? I would like to outfit this bike with Bontrager race lite wheels, saddle, handlebar, etc.
