with a 164cm girlfriend on it. She was on the verge between XS and S and now we are unsure if we did a mistake taking XS.
How can we best determine if it is worth sending the bike back? Any YouTube videos you can recommend? I am mostly worried about the saddle position compared to the pedals (triangle of power, you know). For the hip angle, I was thinking of buying a 10cm stem (currently 5.5cm) which should solve any problems in shortness of the reach.
Her subjective feeling: bike looks small but I feel fine on it. She rode it for 2x 15min before reaching the verdict.
We are casual bikers, we bike to work and back everyday (7-10km) and do a 50-100km trek once a month in the summer. Might also consider doing a small tour with that same range for a couple of days in a row.
Thanks in advance!

Well since you are taking bike fit advice from internet randos, I’d stay with the xs. Seatpost should come down a hair if that’s where her feet hit the pedals; I’d wager it’s different with the shoes and pedals she rides in. Stems can be changed. Also check the crank length. Many bikes ship 175 which is stupid long for us short folks. I’m a 162cm dude btw.
