I ride an All City Mr Pink as my do-it-all adventure x-bike, but the frame is bent so I'm looking to replace it. It squeezes 33c CX tires that measure 35mm. Would prefer to stick with Mid-Reach Rim Brakes not Cantis or Mini-v.
I can think of:
Velo Orange Randonneur
Soma Pescadero
Rivendell Rodeo (not ideal due to 1" stem)
Various used bikes that aren't really available – used Mr Pink, used Swiss Cross, etc…
Would prefer 1 1/8" Threadless headset and a modern (slightly fatter) tubeset. I'm in the masters category but still have a 1200 watt sprint and do race gravel/ CX/ ultras on this bike.
I don't care how the frame is put together. Tig probably.
Also open to recs for affordable (if that exists?) custom builders.

Currently buikding up a Salsa Casseroll that fits your requirements. Don’t know what the second hand supply for those is though.

Unfortunately this is the domain of custom outside what you listed & the Crust Malocchio. Most rim brake wide tire bikes are rocking with canti brakes currently. Mid reach brakes just aren’t very adventure oriented, and there are very few on the market that fit your tire size. Basically just the Tektro and VO Grand Crus. You might want to track something down older, like another All City frame, a Black Mountain Road, etc Builders who I would go to for this kind of bike include Fitz Cycles, Ira Ryan, Rodriguez

Im looking for the same thing. All City Zig Zag or Standaert Pfadfinder are my top picks. Zig Zag frames are gone, but completes are available. Love the gold paint. I will probably get the Pfadfinder frame when I feel like I have a few extra bucks. Ritchey Swiss is more of a cross bike but great deals recently.
VO Rando or Soma Pescadero are likely the only things out there with those constraints, but they are both also likely to be noodle-y under your output. The Mr. Pink has stiffer tubing for sure (I own one too). I’d either accept discs (cause they are better tbh) or get something custom-ish. Larkin Cycles comes to mind and makes some really nice stuff. IIRC Ron’s Bikes has a small-batch production bike that is exactly what you’re describing coming out next year that Larkin will be making in CT. That doesn’t help you now, though.
State 4130. It has horizontal dropouts so single speed oriented but you can add a problems solver hanger if you want. It’s super solid and way cheap. I have 40 or 42s on with it all the way in the track end.
Why not disc brakes?
Riv Roadini is great. I would in no way take points off for a quill stem unless your goal is to keep it ultralight.
Curtlo would be on my list for “affordable custom”. Also perhaps Elephant.

Trek FX?
It’s really a great type of bike but unfortunately not much available. I have a riv rambouillet and love it to death. I gad a b-side and a wolverine and can’t recommend soma enough.

Budget?
How bent is the frame? Maybe less so now, but a shop used to be able to straighten a frame to a point. If none of the tubes are kinked it would be worth a try. That’s the point of a steel frame is that it’s actually repairable.
Look for a used surly pacer!

The cheapest custom frames I know of are Marino and they have a good deal of flexibility when it comes to tubing and the like

Genesis Equilibrium but you would have to import it. The tire clearance might only be 32c though.
In the used frameset category, you might want to consider the Novara Randonee, Trek 520 and the Handsome Devil. All three have cantilever brake studs and 135 rear spacing. Depending on the year, the Trek may have a 1” steerer tube, so you’ll need a shim.
