Do you have any suggestions, as I am open to anything.
I plan to travel around 50 miles per day, with frequent rest days exploring cities, and I am also going to sleep in a tent in the wild every day to save money.
If I remember correctly, you can’t cross into Serbia from Kosovo. I entered from Bosnia and they still thoroughly searched my passport for a Kosovo stamp.

Central Spain can be boring, lots of flat land and sparse population. If that’s what you’re looking for, great, but do keep it mind.
I cycled along the coast between Valencia and roughly Peníscola. I found it largely to be dreadful and much too heavily built up for me to be able to enjoy it. On the other hand I had a blast away from the coast in both the Valencian community and in Catalonia, albeit generally more challenging with much less infrastructure and considerably more elevation gain.
The Croatian coast is regularly mentioned on here as being very busy, especially in summer. Consider going further inland, or going island hopping.
Going from Kosovo to Serbia might be difficult this way, with Serbia technically considering that an illegal entry into their state, even if it might not be heavily enforced. Consider leaving Kosovo through North Macedonia, and if you’re keen on checking Serbia out do that right before Kosovo or after North Macedonia.

I did the stretch in Spain along the Mediterranean. It’s gorgeous, and you’ll love it. You might want to consider a small detour in France to Carcassonne. It’s a spectacular castle. To get there I went through le gorge de galamus which is one of the most gorgeous routes I’ve ever taken. Doing this detour would probably cost you 1-2 days.
Expect cars to get a lot scarier going from Spain into France lol.
