Brand new to mountain biking and this Marlin 7 a couple of weeks ago. When I first got out today, I noticed that it felt odd to turn the handlebars. Not long after, it is now difficult to turn the handlebars and it makes a crunching / squeaking sound in the head tube. What did I break and why? I thought this bike would be capable of so much more than what I’ve put it through in two weeks.

Sounds like your headset is trashed.
The headset is a set of components (cups and bearings) that interface between the steerer tube of your fork and the head tube of your bike.
If you bought it new, see if the shop can warranty it.
