I recently bought a new Evasions Lite to replace my Bombora. The Bombora ran 160mm rotors front and rear, the Evasion Lite lists 180mm for the front – I bought a new 180mm rotor in preparation for the frames arrival. The 180mm will not clear, even with the Shimano spacer. This makes me think the flat mount is 140/160 rather than 160/180. Crust wasn’t super helpful, basically said “I don’t know” when I called them. It’s weird, as both the bike page and the page for the carbon fork itself list it being compatible with 180mm rotors on the front. Any thoughts?

Sorry, that’s it mounted with a 160mm rotor. I can’t see how a 180 is supposed to mount without an additional spacer.
On their website it says max front rotor size 160mm not sure where you read 180mm

Well it’s not exactly on topic but 160 is really all you need.
180 puts an eff load of extra flex on the fork and headset and steer tube.
From a mechanics perspective run the 160.
Now for the 180 of course
It is possible you got the wrong adapter somehow, does your lbs have any in stock?
did you try dissmoounting the caliper and rootating the spacer? Check the inbooard side of the mount. If it’s coorrect for 180, it will say 180 with an arrow currently pointing down. When it’s flipped, if it shows 180 ^, you’re all set. Most mounts are set ffor two sizes. 160/180 is probably most common on gravel fork.
You can with adapter shenanigans. 160mm Flatmount to 160mm Postmount > Postmount +20mm to Flatmount adapter. This will 100% brake your fork.
