Check the brake pads are still a bit soft and not cracked. Lube the wheels hubs/axles, check that the pedals are rotating freely.
On top of the tires and tubes of course.
I would also add some modern tape to give a bit of cushioning, this kind of handlebar can be hard on hands, but that’s just me.

Check that you are at least 6’3”, because that is the minimum height you need to be to ride that bike.

Check the wheel size and tire type to verify that you can actually get affordable/practical replacement for them. Older road bikes had stuff like tires where tire and innertube were one part that had to be glued to the rim – or weird proprietary dimensions.
Nothing sucks as hard as spending days restoring a bike only to realize on the finishing touches that the whole bike is toast because certain parts are extinct.
also, check if the derailleur is straight (and if the hanger shows signs of being bent back before…). Since it is one part integrated in the frame, it can only bend so much times before it snaps.
