Unfortunately I can't tell from the data sheet what material the fork is made of on this Canyon Grizl 7. Carbon or aluminum? I would be very grateful for help

AL stands for aluminium
i believe all grizl (& all „road bike“ forks except the suspension ones) are carbon for canyon bikes
There is no grizl with aluminium fork. All have the carbon in fork. The AL Stands for the frame material.
The only exception are of course the trail models with suspension….
