I've recently purchased a second hand MTB. I've never had one with the hydraulic type brake system and used to "cheap bikes".
When applying the brakes they make a groan type noise, could anyone point me in the direction on what may need to be replaced / tightened or otherwise to fix this.

Probably the disc and brake pads are contaminated with oil or some other stuff that is not supposed to be there. The best thing to do is either replace these or clean them deeply.
