

I want to use these cane creek brakes on my this (90’s?) Bianchi Volpe I’m building out. The brake shoe sits well inside the fork limiting how far the brakes will open. Is this how the brake is supposed to sit? It seems like it will work fine with 700x26c tires but ideally I’d like to put wider ones on. Should I get different shoes for these brakes? Should I just deflate the wider tires to remove it when necessary?

It’s possible that your cantilever brake posts are closer to each other than the brake is expecting. You can read more about this problem here: https://velo-orange.blogspot.com/2017/09/canti-post-sizing-psa.html and there’s some good suggestions in the comments

Deflating does work ok if it’s tight.
Sometimes this just happens with 700c bikes and canti brakes. It’s not uncommon on old cyclocross bikes to trim the pads down so the brakes will open all the way and speed up wheel changes.
On these Cane creek brakes, the arm is set back from the end of the brake stud and the brake pad post is set back from the arm. Shimano has a CX brake whose brake pad post is pretty much flush with the brake stud.

They also have long spacers for wide-set studs like you seem to have.
These weird little brake pads might work, or else you just have to deflate to install the wheel.

This used to happen all the time with cyclocross bikes. New pads make the problem worse. You can get shorter pads, chop 20 mm or so off these or get the Shimano thin profile cartridge pads meant for aero bikes with dumb aero brakes.
Yeah, just deflate a bit to remove and inflate after to reinstall. Since the tire is often flat when you try to remove them amyway thats not a big deal on the removal end.
