That’s a super cool groupset! I just finished a project with a very similar frame color, I really like the look of leather tape and saddle. I have had white handlebar tape and I agree with the other comment, even with cleaning after every ride it didn’t stay white for very long. My build is on my page if you want an example!

Depends entirely on the saddle. Match the color if possible. If a leather saddle, use matching leather tape or black cloth.

As you don’t have any other gold parts on the bike but the Saronni letters appear white, I would say white bar tape.
Doesn’t matter how you decide, that’s a beautiful bike.
