I have been now for some time going out on long rides with an All Road Bike I bought for around 1.000 € in 2014. I see that this might not be the best option for unpaved roads, so I am thinking of buying a Gravel Bike. I am specifically taking a look at these:

The price varies from 1.000 € to 5.000 €, and I don't know what is the value on the more expensive side of the spectrum. Weight price the difference is minimal, so is there any other marginal value on a expensive Gravel Bike?

You’re looking at grizl trail for paved roads?
The only thing that I would prioritize when it comes to price is whether the bike comes with hydraulic brakes or not. I think hydraulics are worth the price of entry, but beyond that the gains are more marginal.
Of course, you will need to buy a bike that fits you. That is the same for every price. Beware that some of Canyon’s gravel bikes have a very aggressive geometry.
Groupset in addition to wheels I’d day. Canyon sells decent bikes sub 3k €. Everything over 3k has better wheels, which you can also buy after the initial purchase of the bike. Carbon wheelset starts at 700 €.
For a gravel bike, I would not recommend sram groupsets past rival axs level because replacement parts are getting disproportionately expensive.
Since you’re looking at the Grizl, always worth mentioning Giant also offers the Revolt X series which is also a suspension gravel bike with entries at similar price points. Definitely worth comparing who does what differently at each price point.
One thing that was pretty big for me: afaik Canyon only uses 30mm travel versions of the suspension fork, Giant the regular 40mm
