Riding in this position for 40mi feels pretty good. I’ve made a bunch of micro adjustments. Sometimes my arms fall asleep, and I sit off the back of the seat. What do you think about this riding position?

I am not an expert bike fit, but I have done a few for my bikes. I can tell you that this fit seems atrocious. Also you should fit while wearing your gear, not with crocs and shorts

First thing to notice: saddle too high.

Saddle looks way to high. Your handlebar seems to be set at weird angle (standard is bottom part parallel to the ground). My intuition is : saddle should be lower, handlebar should be lower, reach look ok for recreational fit but too short for “racing” fit. I don’t have much experience though general rule is that if it’s comfortable then it’s comfortable. If you start getting saddle sores, pain in back of the knees or lower back then it’s likely saddle too high.
Don’t worry about platform pedals. Clipless are current fashion but they make little sense for recreational riders.

Back of my knees hurt looking at this. Way too high. Lower it by about 50-75 mm and adjust from there!

Saddle way too high and your bars are way too high too. Throw away those spacers and make your shifters more horizontal to the ground.
