Ingredients for Crepes:
2 eggs
1 tablespoon sugar
1/2 teaspoon salt
1/4 cup cream
2 cups milk (500 ml)
1 1/4 cups all-purpose flour (200 grams)
2 tablespoons rum or brandy
Juice from half a lemon

Instructions:
In a mixing bowl, break the eggs and whisk them together with sugar, salt, and cream.
Gradually pour in the milk while whisking continuously to create a smooth batter.
Add the all-purpose flour and continue whisking until the batter is well combined and smooth.
Stir in the rum or brandy and lemon juice.
Cover the crepe batter and let it sit for 15 minutes.

  1. I’ve never seen crates with blisters. We always did our very low and slow, and they were perfectly white no brown crispy edges no blisters.
