My bike naked is 30lbs and I just weighed it with gear and the bike is 65lbs. Is that on the heavy end or just average? (5 day, 350 mile bike backing trip.)
My minimal setup for camping is 16kg total. The bike is maybe 9kg. That’s with empty bottles, without camp food, no cooking setup, only 2 sets of clothes – maybe not comparable to your needs.

Yes that’s on the heavy side, this looks like traditional bike touring setup.

Touring is a low speed trip. If you’ve got high enough fear ratios for your climbing then you are fine. If you find you packed too much you can always ditch it.

I think a lot of people will be riding with that weight of gear/bike, although of course, there will be those more minimalist. It’s on the heavier end, but not abnormal. And what weight you can shave depends on how light your gear is. Take a look at the comments in this post. 30lbs of gear/food/water sounds more or less similar to what I’d take with a couple of luxuries, though I CAN go lighter. https://www.reddit.com/r/bikepacking/s/x3btT43GFT
