One issue with what I can see is that you greatly increased the front travel. Stock was probably 60mm and you’re now 100-120mm. This will increase your ridehight and shift your weight back. Just be aware that you have a higher center of gravity when tackling tight obstacles and turns.

This exactly what I have been planning to do. Also in your opinion do the v-brakes make much of difference from disc brakes that has really been my determining factor for a old trek I want to fix up.
