My question is, is it really feasible to leave the wheels on the bike like he does? Will I get called out for that? I think it's probably great for the bike but I'm not sure if the total size is going to be a problem.

No idea. But I use BikeFlights to and from Alaska with no issues. I wouldn’t feel comfortable checking one unless it was in a hardcase.
Checking one is definitely cheaper.
