Could someone explain to me what the reasoning might be? Even for brand new pedals, the original axle will have grease around it and thus there will be grease inside the pedal anyway (in the video, it doesn't seem like they remove it).

Because the shimano grease in there is sufficient, and they don’t want excess splodging into the sensor.
Not to mention, then they’d need to supply grease, which will be inferior to the shimano special grease, etc etc etc
