Thinking about buying this bike as a simple commuter (no more than 10 miles at a time) but it is a size Large and I technically (6’3) need an XL. Does frame size really matter that much for my purposes and could I get away with riding a large bike? I’m having such a hard time finding used XL’s

According to Giant’s sizing for that model, 6’3 is the upper range for “L” so you’re withing size. Yes, proper frame size matters. One size lower is actually ok provided it’s fitted correctly – seat height, stem length, etc. Riding size larger is something else especially for male riders. You don’t want them gonads having a conversation with the top tube.
