I crashed hard today on my Ultimate CF SL 8 Disc and took a nice gouge of carbon out of my handlebars. Am I "locked-in" to getting another Canyon cockpit, or am I able to replace it with another brand?

You can buy any handle bar and stem for that model. Might need some other bits and bobs like spacers, since the “aero” ones have little notches, and would just look weird with most stems. Go to a bike shop and I’m sure they can help if you’re not sure.
