Shimano has two different specifications for disc brake rotors brake pad compatibility. They can either be resin only, or resin, metallic or organic. This is due to Shimano's usage of different metal hardness in their rotors. You can use metallic pads, but that means the rotor will wear down in thickness quicker than with resin.
But what is it about brake calipers that specify the pad material restriction? for example, shimano site for MT500s state that the calipers are for resin pads only. Some theories abound that its due to heat propagation from metallic pads to the master cylinder heats up the hydraulic oil in the line faster than resin, etc?
I haven't found anything in the docs about why this restriction, and am curious if anyone has any sources

It’s as you say, the extra heat will require you to bleed your brakes more often.
