I’m upgrading my cranks on my 90s Kestral with dura ace 7140. I’ve been watching videos on how to remove 3 piece cranksets. I believe I have a square taper but I can’t find any pictures or videos that look like my crankset. I’ve seen ones similar where there is a dust cap with an 8mm hex bolt. Is it safe to assume it’s similar and I just need to unscrew this bolt and then use the crank extracting tool? And would it be the same threading where drive side is regular threaded and the non drive is reverse? Thanks in advance for the help!

Both crankbolts are normal thread(lefty loosey) you need a 14mm socket to take that bolt out then normal crank puller.
Double check no extra washer underneath the crankbolts
Make sure it’s fully threaded all the way into the crank arm.
