First issue is the barrel adjuster nut thing doesn’t have enough clearance to spin to tighten the barrel adjuster. I would say that it’s a coincidence and it just doesn’t fit but it came in the set… any help would be much appreciated.
Second problem is that one brake (the left if standing over the bike) is springed (no clue what word i should use) against the rim while the other is springed out of the rim. not sure if that’s normal but none of the videos i’ve watched have that. again, any help would be appreciated.

Run the screw all the way in on both sides at your gyro on your headtube. Get your brakes set up closely to what you want and then fine tune it with those adjusters. Remember to run the set nut up to the bottom of the gyro so it can’t move and come out of adjustment. As far as your rear brakes go if I remeber right and I havent ridden in 15 years or more is that there is an allen head screw on the brake perch. You can loosen it up and adjust the tension on the springs. It looks like your rear brake springs just need to be adjusted. Probably try adding tension to the one thats fartheat away from the Rim. Run the barrel adjusters all of the way up in the top gyro mount
Go to the rear brake line and pull it taunt at the brake and tighten the brake line down
this should remove al the slack from the brake line and allow you to actually get some adjustment out of the barrel adjusters.
