I really like the price point and value of the Endurance CF 8 Disc, but they appear to be sold out in my size (M). I want a carbon bike with Ultegra group set(mechanical/hydraulic disc), but don’t want anything much more fancy/expensive than that.
I see that they have newly released endurance bikes, but none seem to fit that same price point/performance.
Do people more familiar with Canyon have any advice on what to expect for someone with my interests?

Sounds like Endurace CF 8 is definitely the right Canyon match for you. Based on recent releases, they’ll probably release a new CF 8 model that fits your specs soon (unless they decided to start only offering Ultegra with Di2), so I’d keep an eye on the store page and maybe sign up for Canyon’s emails to catch any model releases. They don’t release all the year’s new bikes at once (they also haven’t released a new CF 7 Di2 yet) so there’s still more to be released in the next few months most likely.
There’s the Ultimate CF SL 7, it’s 105 but lighter than the endurace at a similar price point.
