Watched every tutorial and I somehow still can’t seem to figure out how to center the brakes. I adjusted the screws, the barrel adjuster near the brake lever as well as the cable tension

Is the wheel true? Is the wheel firmly set into the dropouts (properly aligned in the center of the frame)?
Were they centered before and something changed?
Loosely attach wheel, clinch brake tightly and then tighten the wheel. It helps if you have someone to hold the brake for you.
Those tiny screws on the outside of the brake pivots control the outward preload on the calipers. Turn them a little bit at a time, continue pulling and releasing the lever, until they’re centered and the lever feel is good.
Is everything nice and greased? I once couldn’t figure it out either and it turned out that on of the two arms wasn’t greases where it attached to the frame and that solved it.
Don’t give up! It’ll be very fulfilling when you get it right
