Whichever tyres have the brightest sidewalls and the biggest logos to draw my eyes away from that stem
Schwalbe Kojak has my vote. Were my go to both in 26″ & 700c for my courier bikes (a looong time ago)

As for stem haters/lovers: this bike was a frame builders project trying stuff out, I’m not sold on the stem yet, but it is unique if nothing else. Loving these modern day hybrids
