I’m a beginner looking to get into road cycling. I think the trek is probably the better built bike for $50 more. Looking to stick with tarmac surfaces only, since I can’t seem to find as many used options for a gravel bike. If I could afford a brand new bike I would go that route. But here we are.

Not even close. Go with the Trek.
Trek has better components
I would say continue to explore the market for a bit longer. Maybe something will pop up that will be better than those two options. Gravity is a big no. Trek is pretty old, I personally wouldn’t pay more than $200.
