Amazing bike. A true and rare classic.
What do you intend to replace? If it was mine I’d try to have as light a touch as possible. Considering that the lighting doesn’t work, I might try and replace the guts of the lights with modern parts, keeping the shells for the look. Otherwise I would probably just replace consumables (tires, tubes, pads, cables, tape, chain, etc) and do maintenance (new grease & bearings in all locations, etc).

Good lord, what a find. Be very, very careful with changing anything on the bike. Talk to other RH owners. You have the RH stem, cranks, and front and rear racks.
I’m a bit surprised about the Weinmann brakes, I’d expect MAFACs. Forget about Paul cantis, your frame doesn’t have canti posts. Your options are Weinmann or MAFAC direct mount or Paul or Rene Herse center pulls.
I have a set of Weinmann post mount center pulls with fresh Kool stop pads and they work very well.
It’s your bike and you do you, but I’d think long and hard before switching out the handlebars and going for bar ends.
Also be careful with the original lightning system and please don’t hack them with LEDs and batteries.
