I have never had gears like this before. Can someone explain how they work? In Peloton terms, I’m only getting like 35 resistance. I need more grit but I’m not sure how to change it. I had a guy at the bike shop look at it but he wasn’t helpful. Any help is appreciated and sorry I’m a noob!

Generally switch gears while pedaling – in the back the smaller gears are harder and it opposite in the front where smaller gears are easier. Maybe find a parking lot? I don’t think an actual bike has resistance but you can find a hill for that.
Those aren’t typical road bike shifters. Those are cheap substitutes for the integrated shifting found on road bikes.
The seven on your right side means you have seven gears in the back. Look at where the chain is on the back cassette (the gears/cogs). It’s probably on the biggest cog now (at 7). If so, going closer to 1 will make it more difficult to pedal. If it’s on the smallest cog at 7, then going closer to 1 will make it easier to pedal.
On your left side, it looks like there are two gears. You can count though, if you have three chainrings in the front where you’re pedals attach, then your left hand will shift 3 gears. Shifting to the H should most likely make you shift to the larger front chainring.
If you are on the largest front ring and smallest rear cog, that’s your highest gear. So that will feel the hardest.
If you are on the smallest front ring and largest rear cog, that will be your lowest gear and feel easiest.
