I recently bought an old cross bike to make a gravel conversion and ran into a strange issue, when putting 32mm tires on the bike the brakes rub on the tire due to the tire protruding from the brake track quite aggressively. The rubbing appears to be due to the brake being convex and the tire bulging out so far.
I feel like if I had a brake pad similar in profile to a road pad I wouldn’t run into this issue, but I can’t find a road pad that works in canti/v brakes
The solution is most likely wider rims, but I don’t want to sink too much money into this project so if anyone has suggestions on brake pads that won’t rub or has dealt with similar issues some info would be a huge help.

ok, at the risk of stating something you might already know.
You have adjusters screws on the base of those V brakes that will pull their resting position either left/right depending on which one you tighten or loosen ( tighten to pull that side out ).
If it’s just the pad hitting the tire then grab a 5/6mm allen key and loosen them, then set them a tiny bit lower on the rim. It can help to pull the brake lever and apply the brakes to see what they’re like when set and then tighten.
