credit card touring is basically just a long bike ride. Yes, it’s more than enough.

Hell yeah. I took this bike on some epic CC tours. Banged out 700km in 3 days across the Jutland peninsula and did 15000m vertical in 5 days across parts if the Badlands route, including gravel.
I would recommend a light “resto mod” ranging from a new cassette to a new groupset, wheels, and touch points.

Seems ideal. Break in the saddle before you leave; I’d prefer something I could leave wet.

Bike would be fine for CC touring. Depending on your route, you might want to replace your chain, cassette and possibly chainrings before you get started, as well as brake pads, cables, tires and tubes. You don’t have the option with these rims, but tubeless is great for touring. I did a gravel tour of Spain last fall. In one day I pulled fourteen cactus thorns from my tires. But not a single flat! Try that with inner tubes.

That’s a great frame. I’ve built one up before. It’s really comfortable so that should be a great set up. It’s ultimately up to you and your preferences though.
