Another bottle cage and bottle ;). I did a 110km recently with one water bottle and I ‘upgraded’ that the next day.

Are you talking 200km in one go, or a bike packing trip where you’ll ride 65ish kilometres a day?
Will you be riding by places where you can get snacks and water?

In one day ? As little and lite as possible. Enough water and snacks on the fly and strategy halts for re-watering and lunch. Padded shorts are a good investment too for longer rides.

A bunch of [scratch labs stuff](https://www.skratchlabs.com/). I like the rice cakes, energy gels, and their hydration powders are really good. If you like caffeine, they have caffeinated gels too. You’ll need to be concerned about replacing your salt.
A solid repair kit.
Quality pair of bibs that fit you properly. For the top, just make sure you can stay warm if need be. Getting cold at the end of these big rides really sucks. Even just having a packable win stopper can save your ass.
Chamois cream if that is your thing and a single serving packet or two if you need it.
Plenty of sunscreen. Maybe bring some along for the ride too depending on the weather. If its going to be super sunny, consider a lightweight long sleeve and maybe bring a bandana, or something to keep the sun of your neck. You’ll also want to wear gloves, getting sunburnt on the top of your hands sucks. Remember to sunscreen your ears, and behind them as well. Many older cyclist get skin cancer behind their ears.
Two 750ml water bottles and planned stops to refill them. You’ll also want to almost exclusively be hydrating with the scratch labs stuff. Having their super high carb mix handy can really safe your ass if you fail to eat enough during the ride or the night before.
Plan for two meal stops. You’ll want to eat real food here, not just the sports nutrition.
Regarding food, for a ride this long, I’d be taking:
* 2-3 energy gel packs, with at least 1 being caffeine.
* 3 or 4 of the rice cakes.
* 6 hydration packs, and if I didn’t fuel well the night before, 2 super carb.
* Probably 2 bananas.
Of course, this all depends on how often you’ll be stopping for food. Expect to eat at least 1 *solid* meal during this ride. If you get super hungry and need to hit a gas station. Grab a coke, some salt a vinegar chips, and a bag of candy you can ride with. I always like to grab gummy bears.
Rides this long are not too crazy. You’ll be fine. Just make sure you eat enough, drink enough, don’t run out of food or water ever. If you can do that, most of your ride management is over. From there, just make sure you prepare for the weather and were comfortable clothes that you know work for you. Chaffing on a ride this long can be a ride ender.

Edit: Oh one weird one that might save you. If you plan to wear a baggy top, consider a tight fitting base layer or putting a piece of tape on your nipples.

Biggest thing will be the butt soreness.
Whatever you can to help with that I’d suggest. Padded bike shorts (without underwear!).

This is going to sound harsh but the thing you need to ride 200km in one shot is experience. You can have all to do-dads and thingamajiggies you want but can you keep pushing your legs that long?

Eye protection
Lip balm
Sunscreen
The biggest thing is an escape plan, you may encounter knee pain or a slew of other possible injuries from riding a bike that you aren’t used to or have had fit to you. Do you have someone who can come pick you up if something goes wrong?
A smart phone works for navigation, I use ride with gps as my app and follow a pre planned route. You can use a combo of google maps and strava heat maps to find the suggested routes

It depends where you go. If you go in the middle of nowhere than you are missing a lot like rack or at least frame bag for food, medical stuff, extra water, emergency parts, light …. if you ride in populated areas then you are probably okay with some basic snacks and little extra water. I live in area where you don’t see anybody for 100 miles so I am overprepared. 🙂

Topeak may still sell an xl saddle bag with stretchy bottle cage. It allowed me to carry 2 bottles on the bike and a spare in the bag. Was then able to carry food also. Was good for 100mile rides.
