On my first tour last year I grabbed what I had around the house (2 person tent, foam mattress and a 3-season sleeping bag I found on sale). This year I bought things specifically for bike touring: 1 person tent (2 layers), sleeping pad with integrated pillow and a very light sleeping bag.
They’re from Sportisimo (Czech sporting goods store), somehow sligthly cheaper than even Decathlon. But they seem to be good quality and for 4-5 uses during summer every year, they should last a long time.
