Went back home for a month to help my dad and didn’t bring my bike with me. Found his old mountain bike in the shed and want to build a gravel bike for him to ride after he heals from surgery. Planned on leaving the drive train alone (for now), but would like to throw on some drop bars. Any shifter, bar, stem etc recommendations? Not trying to go crazy, just something quick so I can ride it while I’m here and get him back riding after he heals from surgery.

I recently used Salsa Chowchipper bars, a Salsa Stem, quill stem adapter, and bar end friction shifters on a Trek Multitrack build and am quite pleased with the results.
I picked up all the parts used on Craigslist, Facebook Marketplace, or Offerup.

It seems clean and complete, so I would say unless you intend to ride it off road, just put smooth tires on it, give it a good tune-up, and ride baby ride!
EDIT: I didn’t see the OP’s comment about building it as a gravel bike. In that case, you probably need a tire that’s more aggressive than a street slick, but probably not with all the rolling resistance of full-on knobby tire has.

gravel build – its done. thats what it was meant to do.
dont give it a drop bar. just ride the damn thing. maybe redo the cables. then ride it for a month like that. then you’ll know what to do.
